Baptism

Layne was baptized earlier tonight. He was baptized at my parents church. Matt's brother Alex and my best friend Leah are Layne's sponsors. Matt and I were both worried that Layne wouldn't handle sitting through the baptism. He surprised us all and did an amazing job! He loved hearing his voice echo in the santuary. After the baptism, we went to The Keg (local chicken place) for dinner.

Thanksgiving

We had Thanksgiving this year with my parents on Friday night at our house. It has kind of become a tradition that Matt and I do Thanksgiving and my parents do Christmas. Grandma and Uncle Bob came down to join us. We had excellent food and lots of left overs. ( Especially turkey since Matt thought we needed to buy a 20 lb turkey!)

Friends

This past Saturday we got to see Matt's friend Laura and her son Miles who came to town to visit her parents. Layne is a little over 2 months older than Miles who was born at the begining of October. The first time we met Miles, he was sleeping. This time around Miles was awake and Layne was very intrigued by his new friend. I'm sure the next time they see each other Layne will want to play with him.

Layne's First Trip to Mall of America!!

While Matt went deer hunting a week ago. My mom took Layne and I to the cities to do some shopping. This was the first "trip" Layne had actually been on. (besides going up to the cabin in Watertown.) Layne was such a good little boy while we were gone. He had a blast! We went to the Mall of America, Ikea, and Medford Outlets. Layne got to be a big boy and sit up in his stroller while we shopped at the Mall. He didn't fuss the whole time we were there. He was too busy looking around at all the people.
We ate at the Rainforest Cafe. Layne loved looking at the fish and the fake gorillas!!

I just had to take a picture of the bathroom at the hotel. I'm totally in love with vessel style sinks and was suprised to see one in our hotel room. I just love how they look and someday would love to have one in my "dream" house.



We have a Food Lover on our hands!!

Matt and I decided that we would try giving Layne some baby cereal one night two weeks ago. Little did we know that our little man would LOVE it so much!! After trial and error we figured out that he does NOT like rice cereal but LOVES the baby oatmeal. He's such a good eater too!! "Daddy, I'm waiting....Are you going to feed me yet?" ( And yes if you did a double take on his bib it does say "Nice Tits Can I Try One?" This would be courtesy of Matt, not Me)

Yes Layne's first feeding was done in his bumbo chair. We didn't have his high chair set up yet because I (not Matt) was not planning on starting Layne on solids until he was 6 months old. We now have his high chair set up. Layne just loves it!! Especially the jungle themed toy that comes with it. (He's figured out how to turn the bird to make the music play...such a smart boy!) Thank you to all that bought us the high chair once again. It is amazing!!

Finally Get Caught Up!!

So we have been quite busy the last couple of weeks. First we had a retirement party for Matt's Uncle that we went to. The weekend after that Layne and I went up to the cities while Matt went deer hunting. This past weekend was spent being lazy. Plus Layne has had his first cold...a doulbe ear infection :( So besides all of that I haven't had a whole lot of time to post pictures.

Layne at daycare one day a couple of weeks ago. He just loves being on his tummy!! (Note: I know his outfit doesn't match. He was being a "fireman" while Grandma changed his diper and peed all over the onesie that he did have on. lol)

Menu Plan Monday


This week is going to be a busy one for us. Matt is getting all lined up for deer hunting next weekend and I'm getting ready to go to the Cities this weekend as well. Here is the menu plan for this week:

Monday- Beer Can Chicken and Garlic Mashed potatoes

Tuesday- Pork Chops and Stuffing Bake and Corn

Wednesday-Walking Tacos

Beer Can Chicken ( I found this at www.famousbbq.com )


You will need:
Whole Chickens, rinsed and patted dry - 2 Each

Butter, soften - 2 Sticks

Famous Dave’s Country roast seasoning - 1 Tbls

Kosher Salt - 1 Tbls

Black Pepper - 1 Tsp

Cans of beer, 12 oz - 2 Cans
Prepare grill or smoker to 325 degrees.
Add soften butter and Famous Dave’s country roast seasoning to bowl and mix until all seasoning is incorporated into butter.
Place chicken breast side up on sheet pan. Without tearing skin, slide fingers between skin and breast to loosen. Work seasoned butter in between skin and breasts on both sides.Rub remaining seasoned butter on skin of chicken, don’t forget the legs.Season both chickens with salt and pepper.
Place roasting pan in smoker or grill. Open beer and place cans into roasting pans. Add 1 cup of water to pan. Place chickens onto beer cans.
Cover smoker or grill and maintain a temperature of 325 degrees. Roast for 20 minutes.After 20 minutes Baste chicken with juices that collect in the bottom of pan every 10 minutes until chicken reaches temperature of 170 degrees at thigh. About 1 to 1 1/2 hours.
Remove Chicken from beer can and place breast side up on clean sheet pan. Cover loosely with foil and let sit for 10 minutes before carving.
Meanwhile skim of fat from juices in roasting pan. Let juices reduce by half. Taste for seasoning and pour over carved chicken.Don’t forget the Famous Dave’s BBQ Sauce!
Makes 2 whole Chickens

Menu Plan Monday


Last Week I did a HORRIBLE job following my menu. I only made the mac and cheese and that was it. This week I hope to do better. Here is my menu plan for the week:
Monday: Cheesey Meatball Subs w/ Cheddary Pouch Potatoes
Tuesday- Mexican Potato Casserole
Wednesday- Slow Cooker BBQ Beef Stew
Thursday- Beef Stroganoff
Friday- Spagetti and focaccia bread
Saturday- Out of Town

Beef Stroganoff
1lb boneless beef sirloin steak, 3/4 inch thick
1 tbsp vegetable oil
1 can cream of mushroom soup
1 can beef broth
1 cup water
2 tsps worcestershire sauce
3 cups uncooked pasta
1/2 cup sour cream
Slice Beef into very thin strips. In medium skillet over medium-high heat, heat oil. Add beef and cook until beef is browned and juices evaporate, stirring often. Add soup, broth, water, worcestershire sauce. Heat to boil. Stir in pasta. Reduce heat to medium. Cook 15 minutes or until pasta is done, stirring often. Stir in sour cream. Heat through.

RIP Lu-dog...

My inlaws recently put their dog Lucy to sleep. She had been having problems for a few years but it finally had taken a toll on her. Last year she was predicted not to live past christmas but surpassed everyones predictions. She was a great dog. When I first met Lucy, I was terrified of dogs. I really had never been around many dogs when I was little. Lucy got me over my fear of dogs. Now I'm obsessed with them. We will miss Lucy!!

My Favorite Little Furball...

This is Chloe. She is our spoiled rotten but very adorable shih tzu that lives with us. She is just smitten with Layne and is his protector. Layne adsolutely loves his Chloe (especially her ears that he enjoys pulling on.)
