Hunter in Training....

Layne is destined to be a hunter. Daddy and Layne bond over the Outdoor Channel. (When Ted Nugent's Spirit of the Wild comes on, he kicks like crazy from the excitement of watching Uncle Ted collect some backstrap!) Layne owns two camo onesies, a camo hat with matching boots (they closely resemble daddy's hunting boots!) He loves watching daddy sort through his hunting stuff from his bumbo chair. I think I'm doomed to be surrounded by hunting talk for the rest of my life! But I guess that's not so bad :)
(Note: I have come to memorize almost every Uncle Ted saying on Spirit of the Wild because that is ALL that is ever on our tv's...Sad when you own 3 tv's and they all play the SAME thing!)



Finally...A Smile has been Caught on Film

Layne is quite the smiley baby....just not for the camera. He will give a person the biggest, cutest smiles ever but once the camera comes out they vanish. However today I finally got my first picture of him smiling. Granted it is not one of his best smiles, but none the less I'm estatic.

GGMA



My Grandma is doing alot better. She has been out of the hospital for about 2 weeks. Yesterday we (Matt, Layne and I) met my parents, ggma, and uncle bob in Chancellor to eat with them. That was the first time GGMA had seen Layne for about 2 weeks. She just truly adores Layne. The only thing we are worried about now is that GGMA keeps telling everyone that she has fallen again when she hasn't. (She keeps reliving her fall over and over again but tells people that she has fallen AGAIN when she hasn't) Also she gets dizzy when she stands up too fast. Also not a good sign.

Menu Plan Monday


I haven't not posted in about a week. I've been very busy this week and when I haven't all I've wanted to do is sleep. Anyways here is our menu plan for the week. Hopefully later in the week I will post some recent pictures of Layne as I have many on my camera.
Monday-Tex Mex Beef and Potatoes
Tuesday- Cheesy Meatball Subs and Roasted Potatoes
Wednesday- Homemade Mac and Cheese and Garlic Bread
Thursday-Slow Cooker BBQ Beef Stew
Friday- Ravioli Lasagna and Foccaccia Bread
Saturday- Walking Tacos

Cheesy Meatball Subs (http://www.kraftfoods.com/)
1 cup Spagetti Sauce
1/2 cup water
2 tbsp Parmesan Cheese
12 oz frozen cooked Meatballs
4 crusty sandwich buns
3/4 cup Mozzarella Cheese
Combine spagetti sauce, water, parmesan cheese and meatballs in large skillet. Bring to boil on medium high heat. Reduce heat to medium simmer 8 mins or until meatballs are heated through. Spoon into buns and sprinkle with mozzarella cheese.

Menu Plan Monday

Last week's menu got a sorts of screwed up, as we had enchiladas on saturday and not monday! And the nachos I made were just awful. :( But the good thing that happened this week was that I made two dishes that Matt thoroughly enjoyed. ( The Italian Pasta Bake and the Pennsylvania Dutch Hame and Noodle Casserole) This week I'm trying a few more new recipes that hopefully will work out good.

Salsa Goulash Recipe

1/2 to 1 lb hamburger
1 small chopped onion
1 can tomato soup
1 tblsp chili powder
1/2 cup salsa
2 1/2-3 cups elbow macaroni

Brown hamburger and onion together. Drain Grease and add soup, chili powder, salsa and noodles. (after noodles have been cooked.) Simmer on low till ready to eat.

My Weekend Plans......

So this weekend I'm going to "attempt" to accomplish some things. I hope to organize the kitchen as my cupboards are a complete mess and i can't find anything in them. (oops!) Matt and I are also going to clean out both of our vehicles as they look like bombs have gone off in them. And for the best part of the weekend...We are going to go see the movie W, which I'm very excited to go see. It looks like such an amazing movie!! I'll have more about it later this weekend...

My Grandma Cont...

My Grandma got out of the hospital today. She seems to be doing a lot better. I haven't seen her since Sunday. Yesterday morning she was moved from ICU to a regular room. None of us know exactly what caused her fall, as my uncle "forgot" to ask when he picked her up from the hospital today. She has a doctor's appointment next week, which my mom is going to so she can ask the dr. what he thinks was/is wrong with her. I worry alot about my Grandma because I want her to be around as long as possible so Layne can spend time with her. In November, my uncle "thinks" that he is taking her on a 10-day trip to Israel. I would love to know his reasoning for thinking that it's okay to take an 81 yr old over to a country that is so close to the war zone. Especially after all she has been through the last week. We are hoping that the dr. says no to traveling over there. I worry that if she does go that something will happen to her or that she will get sick or something. I know that's not the most positive thing to think about, but I can't help it.

Pennsylvania Dutch Ham and Noodle Recipe...

I found this recipe off of http://www.campbellsoup.com/. It looks delicious!!



Ingredients:
1 tbsp. vegetable oil

2 cups cubed cooked ham (about 1 pound)

1 medium onion, chopped (about 1/2 cup)

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)

2 cups shredded extra-sharp Cheddar cheese (about 8 ounces)

5 cups extra-wide egg noodles, cooked and drained


Directions:
Heat the oil in a 4-quart saucepan over medium-high heat. Add the ham and onion and cook until the onion is tender.
Stir the soup in the saucepan and heat to a boil. Reduce the heat to low. Add the cheese and cook and stir until the cheese is melted. Add the noodles and cook until the mixture is hot and bubbling.

My Grandma...

I haven't been posting much lately because my grandma has been in the hospital. Last week she was admitted to the hospital because she had a bladder infection and cellulitis in her leg. She got out of the hospital on wednesday (8th). Yesterday, however she was at the airport with my uncle ( they were planning on going to Oregon for 4 days) and she fell at the ticket counter and broke open her head. She lost a lot of blood from the fall and is now in the hospital again. She is in ICU and is doing better then she was last night. However after running some tests they found out that her fall could of been caused by a blood clot that went from her heart to her lungs causing her to pass out. We don't know when she will be getting out of the hospital. I might not be posting as much until everything settles down a bit more.

Layne had his first professional pictures taken a couple of weeks ago. We took him to JC Penney's and had them done. He would not smile for the camera at all. He was very curious as to what the lady was doing though lol Here's a couple of the shots.

Recipe

I haven't tried this recipe yet but it looks like it would be delicious.
Here is the Recipe for Mexican Beef Stew:

Ingredients:
1 1/2 lb. ground beef 1 large onion, chopped
1/2 tsp. garlic powder OR 4 cloves garlic, minced
1 can (10 3/4 oz.) Campbell's® Condensed Tomato Soup (Regular or 25% Less Sodium)
1 can (10 1/2 oz.) Campbell's® Condensed Beef Broth
1 cup water 2 tbsp. chili powder
3 medium potatoes, peeled and cut into cubes
1 can (about 16 oz.) whole kernel corn, drained
Shredded Cheddar cheese

Directions:
COOK beef, onion and garlic powder in skillet until browned. Pour off fat.
ADD soup, broth, water, chili powder and potatoes. Heat to a boil. Cover and cook over low heat 15 min. or until potatoes are tender. Add corn and heat through. Top with cheese.

We're on a Roll Now!!

A little over a week ago we finished landscaping. That however was not the only project we were in the process of doing. We have had our ONLY bathroom torn up for over a month!! At last however it is FINISHED!!!!!! I am so excited!! The walls are painted, the new tub is in, and the bathroom door is finally on again! The only thing left is some trim!! I can't wait to be done with all of our projects. The last thing we have left is the hallway floor needs to be finished. Then our whole house will be complete!! yay!!!
